Family-size tray of veggie enchiladas with sautéed spinach, mushrooms, peppers, onions and beans. Ingredients can be omitted by request. Each tray includes 8 enchiladas with veggies rolled inside tortillas and topped with homemade slow-simmered classic red enchilada sauce and sprinkled with shredded cheese on top.

Preparation
Refrigerate until ready to eat and then bake in a preheated oven on the middle rack at 175• C for 25-30 minutes or until golden bubbly and warmed throughout. Cover with foil if you want them a bit softer and bake uncovered if you prefer them crispier. So flavorful and delicious! Enjoy!
